Passengers do not appreciate how much culinary skill and logistical know-how goes into making in-flight food, according to Peter Jones, newly appointed as the world’s first professor of airline food at the University of Surrey in Guildford. Jones’ post is funded by the International Flight Catering Association, which represents in-flight food organisations.
